Signature — the personal signature of a harvest. This limited edition does not follow a recipe fixed in advance. During the harvest, Saša Ukušić selects oils at the moments when they show the character he is looking for, then brings them together in a blend intended to capture the best that particular harvest can offer. The aim is balance between fruitiness, bitterness and pungency, together with a distinctive signature that does not need to be identical from one year to the next. Each harvest therefore becomes a new interpretation, and each bottle carries the personal selection and signature of the person who shaped the blend.
