Istria and the olive. A story more than two thousand years old

The olive has been part of the Istrian landscape and culture since antiquity. Over more than two thousand years, it has become part of everyday life, gastronomy and the identity of the place where Konfin is created.

This connection is more than heritage. It continues today through the knowledge of olive growers, careful work in the grove and a modern approach to production.

At the edge of olive cultivation

Istria lies around the 45th parallel, an area traditionally regarded as the northern vegetational limit of olive cultivation. This idea of a boundary became one of the foundations of the Konfin identity.

At the northern edge of the Mediterranean olive-growing area, natural conditions meet human experience and precision. From this comes an oil with a strong and distinctive Istrian character.

Istrian olive growing has developed over generations. Its value lies not only in tradition, but in knowledge that continues to evolve — from work in the grove and the right harvest moment to modern methods of processing and preserving the oil.

Konfin is created at this meeting point between nature and people: an origin that cannot be replicated and knowledge that seeks the best expression of each fruit, season after season.

A tradition that is still alive

Old olive trees, dry-stone walls, terraces, ladders and the harvest are more than images of the past. They remain part of the landscape and culture in which the olive is cultivated in Istria today.

Konfin does not turn this tradition into nostalgia. It is the foundation of a contemporary product — authentic in origin, precise in production and focused on exceptional quality.

Istrian olive oil was highly valued in Roman times. Ancient sources and today’s historical interpretation of Istria describe it as a benchmark of quality within the Roman Empire: Martial used Istrian oil as a comparison for excellence, while Pliny the Elder placed its quality alongside other renowned oils of the ancient world.

That reputation is also supported by material evidence. Along Istria’s western coast, archaeological sites reveal production and trade on a remarkable scale. At Barbariga, an ancient oil mill at one stage had ten pairs, or twenty presses;

Fažana was an important centre for amphora production used to export Istrian oil; Brijuni preserves traces of Roman agricultural installations and an olive tree about 1,600 years old; and the Pula Arena today houses amphorae and an exhibition on ancient olive growing and oil production.

Konfin continues this connection between Istria and the olive: rooted in origin, contemporary in production and focused on quality that can be demonstrated.

An origin that matters

For Konfin, origin is more than a place named on a label. The ISTRA designation of origin connects the oil to the area where it is produced and to a traceability system that follows the product journey from the olive grove to the final package.

It is the link between the land, the fruit, the work of the olive grower and the oil that ultimately reaches the table.
